Ingredients

Method

  1. Preheat oven to 190C [adjust for your oven]
  2. Roll out pastry and place in a pre-greased baking dish. Bake in the oven for 15 minutes with another baking dish on top of the pastry. This allows the pastry to harden a little bit before adding the liquid later.

  4. Slice onions in to rings. Fry in a little oil on a non-stick pan until clear. Add the diced bacon. Continue cooking until bacon is cooked. Drain off all that fat. No one needs that!
  5. Add the mushrooms and continue to cook until just wilted. Remove from heat.
  6. In a bowl, mix the eggs, cream, milk, salt and pepper. Do NOT over beat. This stops the mixture from producing a clear liquid when baked - like when you make scrambled eggs.
  7. Place bacon/onion/mushroom mixture in the bottom of the pastry. Pour over egg mixture gently. Place in oven and cook until golden brown. The top may not be hard but will harden on cooling. [Eggs cook for up to five minutes after taken off the heat. Useless trivia time!]
  8. Serve with a salad.
